Avocado Salad Tostadas

Avocado Salad Tostadas
This is an easy and refreshing tostada that our students love to make and eat. For more recipe ideas visit www.kidscookingforlife.org.
Ingredients
- 1 tomato, chopped
- 1/2 jalapeno or serrano peppers, finely chopped - or more to taste
- 1/2 red onion, finely chopped
- 1 avocado, pitted and diced
- 1/2 cup raw sweet corn kernels
- 2 radishes, thinly sliced
- 1/2 cucumber, diced
- ½ bunch cilantro, chopped
- 2 limes, juiced
- salt and pepper to taste
- ½ teaspoon garlic salt
- 6 Tostadas
- Hot sauce or Tajin for serving
Directions
- Prep the veggies-core and chop the tomato, remove membrane and seeds from jalapeno and finely chop, finely chop the red onion, peel, pit and dice the avocado, cut the corn from the cob, thinly slice the radishes and dice the cucumber,
- Mix all the veggies together in a medium bowl.
- Chop the cilantro and add to the veggie mix, stir to combine.
- Season with lime juice, garlic powder, salt & pepper.
- Top each tostada with a scoop of the veggies.
- Add hot sauce or Tajin to taste and enjoy.
Notes
Variations and substitutions:
- Try adding 1/4 cup cotija cheese or queso fresco to the veggie mixture
- Top with homemade pico de gallo
- Add thinly sliced carrots to the veggies
