Sunny Power Bites

These crunchy balls are a nutritious powerhouse and fun to make.

Ingredients

  • 1 1/2 cups quick cooking oats
  • 1/2 cup + 1 tablespoon sunflower seed butter
  • 2 tablespoons maple syrup
  • 2 tablespoons raw or toasted sunflower seeds
  • 2 tablespoons mini chocolate chips

Directions

  1. Mix the oats, seed butter and syrup together until combined.
  2. Stir in the sunflower seeds and chocolate chips until a dough forms. If dough is too sticky, add some oats 1 teaspoon at a time, until firm enough to handle. If dough is too crumbly, add seed butter 1 teaspoon at a time until mixture holds together.
  3. Using gloved or wet hands, scoop a tablespoon of the mixture then roll into a ball using your hands. Repeat with the rest of the dough.
  4. Store in a sealed container in the refrigerator.

Notes

Substitutions and Variations

  • Try your favorite nut butter for the sunflower butter.
  • Sub 1/3 cup flax meal or ground chia seeds for 1/2 cup of the oatmeal
  • Add 1 tablespoon of dried cherries or golden raisins for added nutrition and flavor
