Easy White Chicken Chili

This hearty white bean chicken chili is made with tender chicken, broth, chopped green chiles and white cannellini beans. Easy recipes with simple ingredients to keep you full and happy on a budget!

Ingredients

  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 Tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground chicken
  • 1 can (4 ounces) chopped green chiles
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 can (14-½ ounces) reduced-sodium chicken broth
  • Optional toppings: sour cream, yogurt, shredded cheddar cheese and chopped fresh cilantro

Instructions

  1. Rinse and drain the cans of beans.
  2. Chop the onion and mince the garlic.
  3. Heat the olive oil in a large saucepan over medium-high heat.
  4. Add the onion and cook for 3-4 minutes until softened. Add the garlic and cook for another minute.
  5. Add the ground chicken and cook until the chicken is no longer pink, 6-8 minutes, breaking up the chicken into crumbles as it cooks.
  6. Pour 1 can of the rinsed and drained beans in a small bowl; mash slightly. Stir the mashed beans, the remaining can of beans, the chiles, the seasonings (cumin, oregano, salt and black pepper) and the broth into the chicken mixture; bring to a boil.
  7. Reduce heat; simmer, covered, until flavors are blended, 12-15 minutes.
  8. Serve with toppings as desired.

Notes

Variations to Try

  • Try with ground turkey or diced boneless chicken breasts.
  • Experiment with different spices or add hot sauce for more “heat.”
