Roasted Red Pepper Soup & Mediterranean Grilled Cheese

This comforting hot and delicious pairing is a match made in heaven.

Ingredients

Roasted Bell Pepper Soup
  • 1 Tablespoon unsalted butter or olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 15oz jar Mezzetta Roasted Bell Peppers
  • 1 broth cube
  • ½ teaspoon salt
  • 1 cup cream, optional
Mediterranean Grilled Cheese Sandwich
  • 8 slices whole wheat bread
  • 4 Tablespoons unsalted butter, room temperature
  • 8 ounces mozzarella cheese, grated or sliced
  • 1 cup spinach leaves
  • ½ cup Mezzetta Kalamata olives, optional

Instructions

Soup
  1. Dice the onion and mince the garlic.
  2. Melt the butter in a medium pot. Add the onion and garlic and cook until the onion is translucent and the garlic is fragrant, approximately 2-3 minutes.
  3. Transfer the onion and garlic mixture to a blender.
  4. Dissolve the broth cube in 2 cups of water.
  5. Drain the bell peppers. Add the drained bell peppers, broth cube and salt to the blender; blend until smooth.
  6. Return the mixture to the pot, add the cream and heat on medium high. Bring the mixture to a boil, then turn down the heat to simmer while preparing the grilled cheese.
Grilled Cheese Sandwich
  1. Spread the butter on one side of each slice of bread ( this will be the outside).
  2. Add a slice, or 2-3 Tablespoons, of cheese. Top the cheese with olives if you are using them, and ¼ of the spinach. Add more cheese on top of the spinach and close the sandwich with another slice of bread.
  3. Cook the grilled cheese on each side in a medium skillet on medium heat, until lightly browned and the cheese is melted, about 2 minutes. Repeat with the remaining sandwich ingredients.
  4. Serve alongside the roasted red pepper soup.
