Banana Pudding

A delicious no cook dessert that is quick to put together, perfect for busy weeknights.

Ingredients

  • 2 cups Greek yogurt, plain
  • 4 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 2 bananas, ripe
  • 1 cup heavy cream
  • 2 cups vanilla wafers or lady fingers

Directions

  1. Directions:
  2. In a bowl place Greek yogurt, sugar, vanilla and sliced bananas.
  3. Use a whisk to mash the bananas and whisk until smooth. Can be smooth or slightly lumpy with some texture.
  4. In another bowl, whisk the heavy cream until it is fully whipped.
  5. Using a spatula, gently fold the whipped cream into the banana yogurt.
  1. Assembly:
  2. Break up some of the cookies to line the bottom on the parfait cup or the pie pan.
  3. Scoop HALF of the pudding mixture and level off.
  4. Top with another layer of cookies (reserve some to crumble on top for garnish)
  5. Scoop remaining pudding mixture and level off.
  6. Sprinkle reserved cookie crumbles on top.
  7. Cover and set in the refrigerator for at least 1 hour to set.

Notes

Substitution and variations

❏ Try using seasonal fruits in place of the bananas and cookies layered with the yogurt mixture- mandarin sections layered with the yogurt and topped with mini chocolate chips, sliced strawberries and granola or try lemon zest and juice in the yogurt cream with blueberries.
