Mango Slaw

This colorful slaw is fresh, crunchy, and full of sweet mango and bright lime flavor. It’s a fun way to Eat the Rainbow and works well as a side dish or topping for tacos!

Ingredients

Mango Slaw
  • 1 cup green cabbage, thinly sliced
  • 1 cup red cabbage, thinly sliced
  • ½ cup carrots, peeled and grated
  • ½ cup fresh cilantro leaves, roughly chopped
  • ¼ cup fresh mint leaves, torn into small pieces
  • 2 cups ripe mango, peeled and cut into small pieces
Ginger-Lime Dressing
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon fresh ginger, peeled and finely grated
  • ½ tablespoon honey or agave syrup
  • ¼ teaspoon kosher salt
  • Freshly ground black pepper, to taste

Directions

Prepare Mango Slaw
  1. Cut the green cabbage and red cabbage into thin strips.
  2. Peel the carrots and grate them.
  3. Add the cabbage and carrots to a large bowl.
  4. Roughly chop the cilantro and tear the mint leaves into small pieces.
  5. Add the cilantro and mint to the bowl.
  6. Cut the mango lengthwise along each side of the large, flat pit in the middle.
  7. Carefully peel the mango pieces.
  8. Cut the mango into small bite-sized pieces.
  9. Add 2 cups chopped mango to the bowl with the vegetables.
Ginger-Lime Dressing
  1. Add 2 tablespoons lime juice to a small bowl.
  2. Add 1 teaspoon lime zest.
  3. Add 1 teaspoon grated ginger.
  4. Add ½ tablespoon honey or agave syrup.
  5. Add ¼ teaspoon kosher salt and a little black pepper.
  6. Whisk everything together until combined.
Make the Slaw
  1. Pour the ginger-lime dressing over the mango and vegetables.
  2. Gently toss everything together until evenly coated.
  3. Taste and add a little more lime juice, salt, or pepper if needed.
  4. Serve right away or chill until ready to eat.

Notes

Variations to Try:

  1. Add thinly sliced bell pepper for even more color and crunch.
  2. Try pineapple, peach, or another ripe fruit instead of mango.
  3. Add a little extra lime juice for a brighter, tangier flavor.
  4. For a little heat, add a small amount of finely chopped jalapeño.
