Banana Blueberry Muffins

This easy recipe covers all 4 pillars of nutrition and the muffins are moist and delicious.

Ingredients

  • 1 cup mashed banana - from about 2 bananas
  • 1 egg
  • ¼ cup plain yogurt
  • ½ teaspoon vanilla
  • ¼ cup honey
  • 2 tablespoons coconut oil, melted
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup fresh blueberries

Directions

  1. Preheat oven to 400F. Line 6-7 muffin cups with paper liners, set aside.
  2. Mash the banana with a fork in a medium mixing bowl.
  3. Mix in the egg, yogurt, vanilla, honey and coconut oil until all the ingredients are well combined.
  4. Add the flour, baking powder and salt and mix just until everything is incorporated - be careful not to overmix.
  5. Fold in the blueberries.
  6. Distribute batter among paper lined muffin cups.
  7. Bake for 20-25 minutes until toothpick inserted in center of several muffins comes out clean.
  8. Allow to cool about 10 minutes before enjoying.
