Banana Blueberry Muffins
This easy recipe covers all 4 pillars of nutrition and the muffins are moist and delicious.
Ingredients
- 1 cup mashed banana - from about 2 bananas
- 1 egg
- ¼ cup plain yogurt
- ½ teaspoon vanilla
- ¼ cup honey
- 2 tablespoons coconut oil, melted
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- ¼ teaspoon kosher salt
- 1 cup fresh blueberries
Directions
- Preheat oven to 400F. Line 6-7 muffin cups with paper liners, set aside.
- Mash the banana with a fork in a medium mixing bowl.
- Mix in the egg, yogurt, vanilla, honey and coconut oil until all the ingredients are well combined.
- Add the flour, baking powder and salt and mix just until everything is incorporated - be careful not to overmix.
- Fold in the blueberries.
- Distribute batter among paper lined muffin cups.
- Bake for 20-25 minutes until toothpick inserted in center of several muffins comes out clean.
- Allow to cool about 10 minutes before enjoying.
