Rainbow Pinwheel Sandwiches
Colorful and fun finger food for a kid-friendly lunch option or enjoyed as a healthy snack.
Ingredients
- Organic whole wheat tortillas
- ⅔ cup whipped cream cheese, or hummus
- ½ cup thinly sliced red/yellow/orange bell peppers
- ½ cup thinly sliced carrot strips
- ½ cup baby spinach leaves
- 1 medium English cucumber, thinly sliced
- ½ cup shredded purple cabbage
- Scallions or chives, chopped
- 1 cup cooked shredded chicken (optional)
Instructions
- Thinly slice (julienne) the peppers, carrots, cucumber, red cabbage.
- Spread out on plates by color.
- Spread cream cheese or hummus evenly over the tortillas.
- Leaving a 1 inch border on all sides, lay out vegetables in rows across the tortillas.
- Top with shredded chicken if using. Try to have at least 5 colors on each tortilla.
- Sprinkle with chives or scallions.
- Fold ends in and roll up each tortilla. If ends don’t stay shut, you can add a bit more cream cheese to seal.
- Cut crosswise into pinwheels and serve.
