Rainbow Pinwheel Sandwiches

Colorful and fun finger food for a kid-friendly lunch option or enjoyed as a healthy snack.

Ingredients

  • Organic whole wheat tortillas
  • cup whipped cream cheese, or hummus
  • ½ cup thinly sliced red/yellow/orange bell peppers
  • ½ cup thinly sliced carrot strips
  • ½ cup baby spinach leaves
  • 1 medium English cucumber, thinly sliced
  • ½ cup shredded purple cabbage
  • Scallions or chives, chopped
  • 1 cup cooked shredded chicken (optional)

Instructions

  1. Thinly slice (julienne) the peppers, carrots, cucumber, red cabbage.
  2. Spread out on plates by color.
  3. Spread cream cheese or hummus evenly over the tortillas.
  4. Leaving a 1 inch border on all sides, lay out vegetables in rows across the tortillas.
  5. Top with shredded chicken if using. Try to have at least 5 colors on each tortilla.
  6. Sprinkle with chives or scallions.
  7. Fold ends in and roll up each tortilla. If ends don’t stay shut, you can add a bit more cream cheese to seal.
  8. Cut crosswise into pinwheels and serve.

Notes

Variations to Try

  • Add a squeeze of lemon to your sandwich!
  • Try adding chickpeas or other beans for a vegetarian protein.
