Green Chili Corn Muffins

Sweet and savory corn muffins packed full of sharp cheddar and green chilis pairs perfectly with your favorite soups or salads.

Ingredients

  • 1 cup white or yellow cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup self-rising flour
  • 1 cup cream style corn
  • 2 eggs
  • 1 cup sour cream
  • ¼ cup canola oil
  • 1 cup sharp cheddar cheese
  • 4 ounces canned diced green chilis (or fresh if preferred)
  • Cooking spray

Instructions

  1. Preheat the oven to 375 degrees
  2. Spray a 12-cup muffin tin with cooking spray and place it in the oven while you prepare the batter.
  3. Add the dry ingredients (cornmeal, baking powder, salt and flour) to a large mixing bowl. Stir to combine.
  4. Add the wet ingredients (corn, eggs, sour cream, oil, cheese and chilis) into the bowl. Stir until combined. Do not overmix.
  5. Remove the heated muffin tin from the oven carefully.
  6. Pour ¼ cup batter into each muffin cup.
  7. Place the filled muffin tin back in the oven and bake until golden brown at the edges (approximately 20 to 25 minutes).

Notes

Variations to Try

  • Try using different types of chilis, including fresh poblano, or spicy jalapenos or serranos
  • Substitute buttermilk for sour cream
  • Substitute Pepper Jack instead of Cheddar cheese
  • Pour batter into a pre-heated hot cast iron skillet with melted butter.
