Cranberry-Apple Cheddar Biscuits
A quick and yummy recipe for sweet and savory apple cheddar biscuits.
Ingredients
- 1 ¾-2 cups all purpose flour
- 1 Tablespoon baking powder
- ½ teaspoon baking soda
- ¼-½ teaspoon salt
- 4 Tablespoons butter- cut or grated
- ½ cup nonfat plain yogurt
- ½ cup milk
- ½ cup tart apple, small dice
- ¼ cup dried or fresh cranberries
- ¾ -1 cup cheddar cheese, shredded
Instructions
- Grease a sheet pan or 9x9 lined with parchment. Preheat the oven to 375 degrees.
- Mix flour, baking powder, baking soda, and salt together in a large bowl.
- Cut or grate butter into the bowl. Using a pastry knife or fork cut butter into flour mixture into a coarse meal.
- Add milk and yogurt, mixing just until evenly blended.
- Coarsely chop cranberries and apple.
- Add shredded cheese and the fruit (cranberries and apple) to the dough and stir just until evenly distributed.
- Lightly flour a work surface and knead dough a few times until it's no longer crumbly and the dry and moist bits are fully integrated. If the dough is at all sticky, lightly flour your work surface again.
- Gently pat dough ¾ inches thick. Using a 2 1/2” biscuit cutter or a drinking glass, cut biscuits from dough and place on a pan. Gather scraps, pat out again, and cut as needed.
- Bake biscuits on the middle rack of the oven for 15-17 minutes until biscuits are browned.

Variations to Try
- Substitute chopped fresh herbs, such as chives, thyme and rosemary for the cranberries
- Use buttermilk instead of milk and yogurt
- Experiment with different cheeses, such as extra sharp cheddar or gruyere
