Whole Grain English Muffin Pizza with Homemade Sauce
This delicious English muffin topped with your favorite toppings including tomato, cheese and olives. It's great as a snack or delicious lunch.
Ingredients
Easy Tomato Pizza Sauce
- 1 6-ounce can tomato paste
- 1 Tablespoon olive oil
- ½ teaspoon salt
- 1 ½ teaspoons onion powder
- 1 ½ teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 2 Tablespoons water, optional
Pizza
- 4 whole grain English muffins, split in 2 halves
- ¼ cup tomato pizza sauce
- ½ cup mozzarella cheese, shredded
- Veggies as you like, such as:
- ½ bell pepper, thinly sliced
- ¼ onion, very thinly sliced
- Mushrooms, thinly sliced
- fresh arugula
Instructions
Tomato Pizza Sauce
- Combine the tomato paste, olive oil, salt, onion, garlic and Italian seasoning in a small bowl.
- Mix well. Add water if you want a thinner sauce. Set aside.
Pizza
- Heat the oven to 350 degrees.
- Shred the cheese.
- Slice the bell peppers, onion and mushrooms very thinly.
- Spread 1-2 Tablespoons of tomato pizza sauce on top of each English muffin.
- Sprinkle the cheese over the sauce. Place the vegetables evenly on top.
- Place the pizzas on a baking sheet and put them on a middle rack of the oven.
- Bake for 12-15 minutes, or until the cheese is melted. Top with fresh arugula while it is hot.
