Barley Brown Rice

Fragrant and delicious and goes perfect with many of our other recipes.

Ingredients

  • 2 cups short- or medium-grain brown rice
  • ½ cup pearl barley
  • 3 ½ cup water

Instructions

  1. Rinse the rice and barley in a sieve, then drain and move to a 4-5 quart heavy pot.
  2. Add water and bring to a rolling boil.
  3. Reduce heat to low and cook covered, about 45 minutes.
  4. Remove from heat and let stand, covered for 10 minutes. Stir with a rubber spatula.

Notes

Variations to Try

  • Try different fruits, including dried fruit such as raisins, that you have at home.  
  • Add ½ cup of walnuts for extra protein
  • Enjoy this salad with a savory muffin, biscuit, or scone.
