Barley Brown Rice

Barley Brown Rice
Fragrant and delicious and goes perfect with many of our other recipes.
Ingredients
- 2 cups short- or medium-grain brown rice
- ½ cup pearl barley
- 3 ½ cup water
Instructions
- Rinse the rice and barley in a sieve, then drain and move to a 4-5 quart heavy pot.
- Add water and bring to a rolling boil.
- Reduce heat to low and cook covered, about 45 minutes.
- Remove from heat and let stand, covered for 10 minutes. Stir with a rubber spatula.
Notes
Variations to Try
- Try different fruits, including dried fruit such as raisins, that you have at home.
- Add ½ cup of walnuts for extra protein
- Enjoy this salad with a savory muffin, biscuit, or scone.
