Baked Oatmeal Squares with Homemade Applesauce

Ingredients
Homemade Applesauce
- 3 large red apples, cored and chopped into small pieces
- ¾ cup water
- 1 Tablespoon lemon juice
- 1 teaspoon ground cinnamon
Oatmeal
- 2 cups old-fashioned oats
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 ½ cups milk (any type)
- 1 egg
- ½ cup banana puree, about 1 large ripe banana
- 2 Tablespoons oil or melted butter
Instructions
Make the Applesauce
- Preheat the oven to 375 degrees.
- Core and chop the apples into small pieces. Put in a medium to large saucepan.
- Squeeze the lemon juice on the apples.
- Add water and cinnamon to the saucepan.
- Cover and cook over medium heat until the apples are soft, about 15-25 minutes. Smaller apple pieces will cook faster.
- Remove from heat. Mash apples with a fork.
While the apples are cooking, prepare the Baked Oatmeal
- Combine oats, baking soda, salt, and cinnamon in a large bowl.
- Mash banana to make puree in a smaller bowl.
- Add egg, milk, and the oil or melted butter to the banana puree.
- Pour the wet mixture into the larger bowl with the oats. Stir to combine.
- Pour batter into a greased 9x11 pan. Bake for 30-35 minutes.
- Enjoy with applesauce or seasonal fruit topping.

- Use ½ cup applesauce instead of banana puree in the baked oatmeal.
- Bake berries right into the oatmeal.
